One of the things I love about this series is that you've caught the essence of Jack's deep-seated insecurity: he doesn't believe that he's worthy of Ianto's love. That Ianto will leave him because he's "wrong", just like the Doctor said he was. So, no matter how tense the situation is, every little sign that Ianto gives him that he would choose Jack over the alternatives being offered is a cause for rejoicing. Jack hasn't managed to grasp that Ianto rarely notices that alternatives exist, and when he does, he simply brushes them aside.
You summed up Ianto's feelings so clearly in this exchange:
